Ireland posted 241-7 after half-centuries from Amy Hunter and Rebecca Stokell, but West Indies chased down the target with ease.
Matthews struck her second straight hundred, while Taylor returned to form with a match-winning century.
Matthews was named Player of the Match for her all-round performance.
